Cantaloupe Crudo: A Recipe I Can't Wait to Make this Summer

First of all, what even is crudo? Crudo means "raw" in Italian and is typically served with fish. This dish is a bit non-traditional in the sense that it is all plant-based, but each element of the recipe comes together to create a similar sensation and freshness as a classic crudo.

Ingredients:
1/2 cantaloupe, rind removed and sliced thinly
2 persian cucumbers, cut into bite sized pieces
1 small shallot, thinly sliced
1-2 small radishes, thinly sliced
1 serrano pepper, thinly sliced & seeds removed
fresh mint, chopped
fresh cilantro, chopped
olive oil (the higher quality the better)
1 lime
flaky sea salt
fresh cracked pepper
Method:
Create a single layer of cantaloupe on a platter or individual plates.
Add cucumbers, sliced shallots, serrano peppers, and radishes.
Drizzle olive oil over the top and squeeze juice of the lime over the top. Sprinkle with the flaky salt (I use Maldon salt), and add the black pepper.
Garnish with fresh herbs (mint, cilantro)
Serve immediately!
